I have found a few things that are helpful and I am going to share them. I would love to know if anyone else has tips to share!
Bobs Red Mill puts out some gluten free mixes and flours. I tried the chocolate chip cookies and they were ok. THEY MUST BE COOKED ALL THE WAY THROUGH, otherwise they taste like beans. Oh, and don't attempt to eat the dough. You will regret it! It is not good. The cookies cooked are not bad though. I just tried today the Bob's Red Mill brownie mix. It is delicious! Mmmm....
They turned out something like this...
I also found out that most soups have gluten in them.. So now I make my own in big batches and then freeze it so that I have it when I want it.
I made this creamy tomato soup. It was so good.
Can of stewed tomatoes
tomato past (about a tablespoon)
Onions
Carrots
Garlic (fresh)
Basil (maybe 2 tablespoons)
About 1/2 a cup of coconut milk (you could use regular milk if you want)
Salt
pepper
chicken broth
I think that was about it. It was so yummy! Make sure you sauté the veggies first and then add the other ingredients.
Simmer for 20min and enjoy with a slice of Udi's Gluten Free bread.... Delicious
Needless to say, I do a lot of cooking. It is nice to know what is going into what you are eating as well. We haven't attempted bread yet but we did make a cauliflower crusted pizza... it was different....
I have learned the hard way that I can't eat candy, carmel and most chocolate because it has gluten in it. So, now I will be looking for gluten free candy and chocolate. I do know that purdy's dark chocolate bars are gluten free. Just a little hint for all you chocolate lovers.
Anyway, I am sure I will have more recipe's to share with everyone but for now that is about it. If you have any tips or recipe's please feel free to share.

Did I tell you that at the Sechelt Farmer's Market they sell Gluten Free Granola Bars? Let me know if you'd like me to pick you up some. They have some other Gluten Free stuff too, I believe.
ReplyDeleteYes, you said something about the farmers market. Grandma finds me some granola bars that are gluten free too but the next time I come up I will have to check those out. I am always interested in what is gluten free!
